SEATTLE — Salt & Straw, the Portland-based ice cream company known for its unconventional flavors, has announced plans to open two new scoop shops in the Greater Seattle area.
The company, founded in 2011 by cousins Kim and Tyler Malek, is expanding its presence with new locations in downtown Seattle and Redmond.

Kim Malek expressed excitement about the expansion.
“Washington has been such a big part of our journey,” she said. “We’re thrilled at the chance to plant deeper roots in downtown Seattle, as well as to expand our presence in the region with a new scoop shop in Redmond. This city has shaped who we are, and we’re honored to continue growing alongside the community.”
Tyler Malek highlighted the significance of the new Seattle location.
“Pike Place is where so many unforgettable food stories begin, and we’re thrilled to bring Salt & Straw into that legacy,” he said. “Seattle has shaped who we are as a company, and we can’t wait to scoop ice cream in the heart of a city that’s given us so much.”

Salt & Straw said it is committed to hiring approximately 20 people from each area, focusing on creating job opportunities for individuals with barriers to employment, including those from BIPOC, LGBTQIA+, and disabled communities, as well as those with a criminal justice system background.
The new Seattle shop will be located at 102 Pike Street, while the Redmond location will be at 16595 Redmond Way, Suite 170. Both shops will operate daily from 11 a.m. to 11 p.m.
