Banana Ice Cream from Jenny’s

“I scream, you scream, we all scream for ice cream!” I remember this little saying
from when I was growing up playing hopscotch at school. It is true though. We all
love ice cream! My siblings and I were delighted when our mother went grocery
shopping and came back with a frozen, rectangular-shaped container full of
Neapolitan ice cream, or her favorite, maple nut, which I do not see anymore. Our
real favorite was Rocky Road! That creamy milk chocolate, studded with chunks of
mini marshmallows and walnuts. There were six in our family, so when we ate ice
cream, we could devour an entire carton at one sitting! As a teenager, my
girlfriend and I would walk to a Dairy Queen and buy a vanilla frosty and if
we had the extra 50 cents, we would have it dipped in chocolate. I loved to bite
off the tip and suck the soft vanilla ice cream into my mouth and then I would
start at the top and eat the chocolate coating all the way around the cone. When I
had my own family, ice cream was a favorite dessert as well. Baskin-Robbins had
just opened and we were regular customers throughout the year. When we lived
in New York and it was a birthday celebration for one of us, off to Carvel’s I would
go to buy an ice cream cake. They were delicious! During this time, we were
introduced to gelato as well. Chocolate is my favorite to this day. Then Ben &
Jerry’s hit the scene sometime after this. I just had to have a Gelatissimo ice
cream maker and the Ben & Jerry’s ice cream cookbook. Just last year, I passed
all this down to my granddaughter so she could make her family special ice cream
desserts. I must say that the flavors offered today are far more exciting and
tastier than those I grew up eating. And there are many more manufacturers as
well. I can select organic, no-sugar, dairy-free, and even some without corn syrup
the most common ingredient used to make ice cream. If you are like me, you can
eat ice cream year-round, and I do. Below are a couple of my favorite
homemade ice cream recipes and even an ice cream recipe for your dog!
Banana Ice Cream
2 eggs
½ cup sugar
Dash of salt
2 medium bananas sliced thin
2 tsp. lemon juice
½ tsp. vanilla
1 ½ cups heavy cream
½ cup whole milk
Beat the eggs, sugar, and salt until thick and light colored in the bowl of an
electric mixer. In another bowl, beat the bananas, lemon juice, and vanilla until
smooth and add it to the egg mixture. Beat in the cream and milk, combining all
the ingredients. Pour the mixture into the bowl of an ice cream maker and follow
the directions.
Quick and Easy Chocolate Ice Cream
2/3 can sweetened condensed milk
¾ can Hershey’s chocolate syrup
3 cups heavy cream
Combine the condensed milk and chocolate syrup in a pan and cook over low heat
until smooth. Remove from heat and let cool. Add the cream and chill.
Process in an ice cream maker according to the directions.
Delicious Doggie Ice Cream
1 mashed ripe banana
1 cup plain yogurt
1 tsp. honey
½ cup melted peanut butter
Combine the ingredients in a container for the freezer and freeze.
