Ice cream shop uses often-wasted ingredients during Earth Month

GILBERT, AZ (AZFamily) — Salt & Straw is known for its creative, unexpected ice cream flavors and its monthly rotating menu.

But during Earth Month, the ice cream shop in Gilbert is highlighting its mission to reduce food waste by making ice cream with ingredients that are often thrown out.

Eli Escobar, assistant general manager at the Gilbert location, said over the last two Earth Months, Salt & Straw has been able to save over $50,000 worth of food waste by upcycling.

Salt & Straw is also helping reduce paper waste with new, smaller cups that will hold the same size scoop as before! There are several new flavors that use upcycled ingredients.

  • Malted Potato Chip Cookie
  • Coffee and Stone Fruit Marmalade
  • Salted Grapefruit Coconut Julep
  • Banana Parsnip Sherbet
  • Sourdough and Olive Oil Chocolate

The upcycled flavors will be sold at the Gilbert shop through the month of April.
