SANTA CLARA, CA — Salt & Straw has declared that it is taking a stand against food waste with the return of its Upcycled Foods Series, launching April 4 in scoop shops, including at Valley Fair Shopping Center.
Co-founder and head ice cream innovator Tyler Malek has partnered with seven sustainability-driven brands to craft a lineup that showcases over-ripened bananas, forgotten coffee beans, surplus stone fruit, and more, offering a delicious solution to the millions of pounds of food wasted each year in the U.S.
Featured flavors include:
- Malted Potato Chip Cupcake – A rich chocolate barley milk ice cream with fudgy cupcakes, chocolate-dipped Uglies potato chips, and caramel.
- Coffee and Stone Fruit Marmalade – Atomo Coffee’s 50/50 beanless blend swirled with a jammy mix of dried nectarines and apricots.
- Salted Grapefruit Coconut Julep – A tropical take on a Derby classic, blending coconut cream, cacao pulp, and ‘wheyskey’ from Wheyward Spirit.
- Banana Parsnip Sherbet – Roasted bananas and parsnips mixed with vanilla, honey, and a splash of bourbon.
- Sourdough and Olive Oil Chocolate (Vegan) – A twist on pain au chocolat, featuring extra-virgin olive oil and candied sourdough in malty chocolate barley milk.
Since its inception, the Upcycled Foods Series has saved nearly 50,000 pounds of food waste, aligning with Salt & Straw’s mission to blend sustainability with storytelling.
As part of its Earth Month initiatives, Salt & Straw will give away free waffle cones with any single scoop purchase on Earth Day (April 22). Additionally, the brand is rolling out certified compostable scoop cups, cutting 28,000 pounds of paper waste annually while maintaining its signature portion size.
