Barbecue in a waffle cone? New eatery will open at familiar Wilson Borough location.

What do you get when you mix barbecue with waffle cones?

You get one of Wilson Borough’s newest businesses, You Got Cone’D.

You Got Cone’D is set to open at 2300 Butler St., formerly The Ice Cream Corner. Owned and operated by local resident Brian Jones, it will combine barbecue cuisine and ice cream.

He said You Got Cone’D will open within the next two weeks, and will operate daily from 11 a.m. to 9 p.m.

The location is a small building that has seen businesses come and go, including The Ice Cream Corner and a Jamaican food eatery.

“We’re looking to stay for quite a while,” Jones said.

The shop is inspired by Jones’s business You Got Pork’D, which has been operating since 2021 serving barbecue-style food. It operates out of American Club of Coplay and Leaf Cigar Bar in Forks Township. It also has a food truck where they serve their food.

This business was inspired by Jones’s love for cooking barbecue, which started around 2016. At the time, he participated in a neighborhood cook-off, where he received positive feedback on his barbecue skills.

“And at a certain point I was like, ‘You know what? I think I could do this as a business,’” Jones said.

He originally eyed 2300 Butler St. to kick off his business, but it didn’t come to fruition at the time. He eventually opened You Got Pork’D a few years later.

Since 2021, You Got Pork’D has participated in Musikfest and Bacon Fest, and it serves private events like weddings and graduations.

The opportunity to operate from Butler Street came when Larry Steinhouse, former owner of The Ice Cream Corner, listed the business for sale. It opened in the spring of 2023, and Steinhouse announced that the business was for sale this past January.

Since Jones will continue to sell ice cream, along with the barbecue You Got Pork’D serves, it inspired the name “You Got Cone’D.”

The business concept grew from an item on his food truck: a barbecue waffle cone.

“We take a waffle cone, we then take our mac and cheese, and then people would decide whatever meat they want — whether it’s brisket, pork or chicken — and we basically mix that up, stuff it in a waffle cone, and top with our barbecue sauce,” Jones said.

The ice cream will be supplied by Batch Microcreamery, a creamery local to the Lehigh Valley. It has locations in Center Valley and Wescosville.

Jones said You Got Cone’D will also serve vanilla, chocolate and twist soft-serve.

Jones plans to serve other menu items like sundaes, milkshakes, mac and cheese bowls, barbecue tacos and sandwiches. He’s also introducing a concept for chip lovers, where customers can bring a sealed bag of chips and have custom toppings added to it.

Pricing is still being finalized on all products.

Jones lives close to the location, and his children attend Wilson Area High School, so he is looking forward to support from the local community. Several employees from the Ice Cream Corner will be joining the new venture, along with new hires, including his daughter and other Wilson Area High School students.

Jones hopes to provide the community with a new destination for savory lunch and dinner, as well as dessert.

“It’s really delicious, wood-smoked barbecue,” Jones said. “It takes 12-14 hours to make our brisket and our pork. So you’re not just going to get that anywhere.”
